A healthy and easy weeknight dinner featuring roasted sweet potatoes stuffed with hot honey ground beef, perfect for family gatherings.


Ingredients

  • 4 medium sweet potatoes
  • 1 pound lean ground beef (85–90%)
  • 1/4 cup hot honey (divided)
  • 1 medium yellow onion, finely diced
  • 3 cloves garlic, minced
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon chili flakes
  • 3/4 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil (divided)
  • 2 tablespoons fresh parsley or cilantro, chopped
  • 1/2 cup crumbled feta or goat cheese (optional)
  • 2 green onions, sliced
  • 1 tablespoon lime juice
  • 1 avocado, sliced (optional)

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Place the sweet potatoes on the sheet and roast for 30-40 minutes until fork-tender.
  3. Slice sweet potatoes lengthwise, score the flesh, brush with olive oil, and season with salt and pepper.
  4. Heat olive oil in a skillet over medium heat and sauté onion for 3-4 minutes.
  5. Add garlic and cook for 30 seconds until fragrant.
  6. Add ground beef and cook for 6-8 minutes until browned.
  7. Stir in smoked paprika, cumin, chili flakes, salt, and pepper. Cook for 1 minute.
  8. Drizzle in 2 tablespoons hot honey and simmer for 2-3 minutes until slightly thickened.
  9. Scoop a small portion from roasted sweet potatoes to create boats and fill with beef mixture.
  10. Return to oven for 5-7 minutes to warm through.
  11. Top with remaining hot honey, cheese, fresh herbs, green onions, lime juice, and avocado if desired.
  12. Rest for 5 minutes before serving.

Notes

Optional additions include avocado slices and extra herbs. Adjust spiciness by modifying chili flakes and hot honey to taste.
