Description

An easy, delightful Bundt cake featuring bananas, crushed pineapple, and toasted pecans, topped with a rich cream cheese glaze.


Ingredients

  • 3 ripe bananas, mashed
  • 1 cup crushed pineapple, drained
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/2 cup vegetable oil
  • 3 large eggs
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1 cup toasted pecans, chopped
  • For the cream cheese glaze:
  • 8 oz cream cheese, softened
  • 1/4 cup unsalted butter, softened
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 12 tablespoons milk (as needed)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a Bundt pan.
  2. In a large bowl, mix mashed bananas, crushed pineapple, granulated sugar, brown sugar, vegetable oil, and eggs until well combined.
  3. In a separate bowl, whisk together flour, baking powder, baking soda, salt, and cinnamon.
  4. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  5. Fold in the toasted pecans.
  6. Pour the batter into the prepared Bundt pan and smooth the top.
  7. Bake for 50-60 minutes, or until a toothpick inserted comes out clean.
  8. Allow to cool in the pan for 10 minutes, then turn out onto a wire rack to cool completely.
  9. For the glaze, beat together cream cheese, butter, powdered sugar, vanilla extract, and milk until smooth.
  10. Drizzle the glaze over the cooled cake and sprinkle with extra pecans before serving.

Notes

Ensure bananas are very ripe for optimal sweetness. Drain pineapple well to avoid sogginess. Toast pecans for extra flavor.
