- 1 cup sugar cookie dough
- 1 cup homemade lemon curd
- 1/4 cup powdered sugar (for dusting)
- Lemon zest (for garnish)
- A little extra vanilla
- Fresh butter
Instructions
- Preheat the oven to 350°F (175°C).
- Roll the sugar cookie dough into small balls and press them into a mini muffin tin to form cups.
- Bake for 10-12 minutes or until lightly golden.
- Allow the cookie cups to cool completely.
- Fill each cookie cup with homemade lemon curd.
- Dust with powdered sugar and garnish with lemon zest before serving.
Notes
Store leftover cookie cups in an airtight container in the refrigerator for a couple of days. For longer storage, the baked shells freeze well.
