- 1 1/2 cups all-purpose flour
- 1/2 cup sugar
- 2 tsp baking powder
- 1/2 tsp salt
- 1/2 cup milk
- 1/4 cup vegetable oil
- 1 large egg
- 1 tbsp lemon zest
- 1 cup fresh blueberries
- Turbinado sugar for topping
Instructions
- Preheat your oven to 350°F (175°C) and grease or line a muffin tin with paper liners.
- In a large bowl, whisk together the flour, sugar, baking powder, and salt until well combined.
- In another bowl, mix the milk, vegetable oil, egg, and lemon zest until smooth.
- Pour the wet ingredients into the dry ingredients and stir until just combined.
- Gently fold in the blueberries being careful not to crush them.
- Divide the batter evenly among the muffin cups and sprinkle turbinado sugar on top.
- Bake for 18-20 minutes or until a toothpick inserted comes out clean.
- Let cool for a few minutes in the pan before transferring to a wire rack to cool completely.
Notes
For extra flavor, add a splash of vanilla to the wet ingredients. Tossing blueberries in a little flour prevents them from sinking.
