Instructions
- In a mixing bowl, combine chia seeds, almond milk, honey or maple syrup, vanilla extract, lemon zest, lemon juice, and a pinch of salt. Stir well to combine.
- Stir until the mixture looks even and glossy, ensuring every chia seed is coated.
- Let the mixture sit for about 5 minutes, then stir again to prevent clumping.
- Cover the bowl and refrigerate for at least 2-4 hours, or overnight, until the pudding thickens.
- Once set, stir the pudding again and serve in bowls. Top with whipped cream and fresh berries if desired.

Notes
This pudding can be stored in an airtight container in the refrigerator for up to three days. For a richer pudding, use full-fat milk or add cream.
