- Juice of 1 lemon

Instructions
- In a bowl, whisk together the almond milk, yogurt, maple syrup, lemon zest, lemon juice, and salt until well combined.
- Stir in the chia seeds, mixing well to ensure there are no clumps.
- Cover the bowl and refrigerate for at least 2 hours or overnight to allow the pudding to thicken.
- Once thickened, stir the pudding again and serve in bowls or jars, optionally topped with fresh fruit or nuts.
Notes
Store the pudding in a covered container in the fridge for three to four days. Add fresh toppings just before serving for the best texture.
