A simple, bright, and creamy chia pudding infused with lemon that’s perfect for dessert or breakfast.
Ingredients

- 1/4 cup chia seeds
- 1 cup almond milk (or any milk of choice)
- 2 tablespoons honey or maple syrup
- 1 teaspoon vanilla extract
- Zest of 1 lemon
- Juice of 1 lemon
- Pinch of salt
- Whipped cream (optional, for topping)
- Fresh berries (optional, for garnish)
Instructions
- In a mixing bowl, combine chia seeds, almond milk, honey or maple syrup, vanilla extract, lemon zest, lemon juice, and a pinch of salt. Stir well to combine.
- Stir until glossy and even, making sure every chia seed has a wet coat. The mixture will look loose at first but will thicken as the seeds absorb the liquid.
- Let the mixture sit for about 5 minutes, then stir again to prevent clumping.
- Cover the bowl and refrigerate for at least 2-4 hours, or overnight, until the pudding thickens.
- Once set, stir the pudding again and serve in bowls. Top with whipped cream and fresh berries if desired.
Notes
Try adding a teaspoon more lemon juice for a brighter flavor, or swap half the almond milk with coconut milk for added richness.
