Description

  • 4 cloves garlic, minced
  • 2 lemons, juiced and zested
  • 4 tablespoons olive oil

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, mix together minced garlic, lemon juice, lemon zest, olive oil, salt, and pepper until glossy.
  3. Rub the mixture all over the chicken, making sure to get under the skin.
  4. Place the chicken in a roasting pan and roast for about 90 minutes or until the internal temperature reaches 165°F (75°C).
  5. Let the chicken rest for 10-15 minutes before slicing.
  6. Garnish with fresh herbs and serve with pan juices.
