- 4 medium apples, sliced
- 3 large carrots, sliced into discs or batons
- 1/4 cup pure maple syrup
- 2 tablespoons Dijon mustard
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh thyme (optional for garnish)
Instructions
- Preheat your oven to 425°F (220°C).
- In a medium bowl, whisk together the maple syrup, Dijon mustard, and olive oil.
- In a large bowl, combine sliced apples and carrots. Pour the maple-Dijon mixture over the top and toss well.
- Spread the apples and carrots in a single layer on a baking sheet lined with parchment paper.
- Transfer to the preheated oven and roast for 25-30 minutes, stirring once halfway through.
- Remove from the oven, let cool slightly, garnish with thyme, and serve warm.
Notes
Cut the apples and carrots uniformly for even cooking. Store leftovers in an airtight container in the fridge for up to three days.
