A delightful side dish that enhances the natural sweetness of carrots with a rich glaze of maple syrup.

- 1 pound fresh carrots (baby or regular, sliced into sticks)
- 3 tablespoons pure maple syrup
- 2 tablespoons butter or olive oil
- Salt to taste
- Pepper to taste
- Optional: Chopped fresh herbs for garnish (like dill or parsley)
Instructions
- Preheat your oven to 400°F (200°C).
- If using whole carrots, cut them into sticks or rounds about 1-inch thick and place them in a large mixing bowl.
- Drizzle the melted butter (or olive oil) and maple syrup over the carrots. Season with salt and pepper, and toss well to coat.
- Spread the carrots in a single layer on a baking sheet lined with parchment paper.
- Roast for about 20-25 minutes, tossing halfway through, until tender and slightly caramelized.
- Remove from the oven, taste and adjust seasoning if necessary, and garnish with fresh herbs if desired.
Notes
Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat with a splash of water or more maple syrup for moisture.
