A delightful side dish that enhances the natural sweetness of carrots with a rich glaze of maple syrup.


Ingredients

  • 1 pound fresh carrots (baby or regular, sliced into sticks)
  • 3 tablespoons pure maple syrup
  • 2 tablespoons butter or olive oil
  • Salt to taste
  • Pepper to taste
  • Optional: Chopped fresh herbs for garnish (like dill or parsley)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. If using whole carrots, cut them into sticks or rounds about 1-inch thick and place them in a large mixing bowl.
  3. Drizzle the melted butter (or olive oil) and maple syrup over the carrots. Season with salt and pepper, and toss well to coat.
  4. Spread the carrots in a single layer on a baking sheet lined with parchment paper.
  5. Roast for about 20-25 minutes, tossing halfway through, until tender and slightly caramelized.
  6. Remove from the oven, taste and adjust seasoning if necessary, and garnish with fresh herbs if desired.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat with a splash of water or more maple syrup for moisture.
