Ingredients

  • 2 cups water or chicken broth
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 bell pepper, diced
  • 1/4 cup red onion, diced
  • 1/2 cup hummus
  • Olive oil
  • Salt and pepper
  • Lemon juice
  • Fresh parsley, chopped

Instructions

  1. Rinse quinoa under cold water, then combine with water or chicken broth in a pot. Bring to a boil, reduce heat, and simmer for about 15 minutes until liquid is absorbed. Let it sit covered for a few minutes.
  2. Season chicken breasts with olive oil, salt, pepper, and lemon juice. Grill or sauté until cooked through, about 5-7 minutes per side. Let rest before slicing.
  3. In bowls, layer cooked quinoa, chopped veggies, sliced chicken, and a dollop of hummus.
  4. Drizzle with olive oil and additional lemon juice if desired, then garnish with fresh parsley and serve immediately.
