- 1 ½ lbs ground chicken
- 1 cup breadcrumbs
- 1 cup grated Parmesan cheese
- 3 cloves garlic, minced
- ½ cup onion, diced
- ½ cup bell pepper, diced
- 1 large egg
- 1 tsp salt
- ½ tsp pepper
- 1 tbsp fresh parsley, chopped
- 1 tbsp olive oil (for brushing)
Instructions
- Preheat oven to 375°F (190°C).
- In a large bowl, combine ground chicken, breadcrumbs, Parmesan cheese, and minced garlic.
- Add diced onion, diced bell pepper, and cracked egg to the mixture.
- Season with salt, pepper, and parsley; mix until just combined.
- Transfer the mixture to a greased loaf pan or form into a loaf on a lined baking sheet.
- Brush the top with olive oil and sprinkle with Italian seasoning if desired.
- Bake for approximately 60 minutes or until the internal temperature reaches 165°F (73°C).
- Let rest for 10 minutes before slicing and serving warm.
Notes
For a healthier version, substitute ground turkey for chicken. Modify seasonings to your taste with different herbs or spices.
