Ingredients

  • 1 ½ lbs ground chicken
  • 1 cup breadcrumbs
  • 1 cup grated Parmesan cheese
  • 3 cloves garlic, minced
  • ½ cup onion, diced
  • ½ cup bell pepper, diced
  • 1 large egg
  • 1 tsp salt
  • ½ tsp pepper
  • 1 tbsp fresh parsley, chopped
  • 1 tbsp olive oil (for brushing)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large bowl, combine ground chicken, breadcrumbs, Parmesan cheese, and minced garlic.
  3. Add diced onion, diced bell pepper, and cracked egg to the mixture.
  4. Season with salt, pepper, and parsley; mix until just combined.
  5. Transfer the mixture to a greased loaf pan or form into a loaf on a lined baking sheet.
  6. Brush the top with olive oil and sprinkle with Italian seasoning if desired.
  7. Bake for approximately 60 minutes or until the internal temperature reaches 165°F (73°C).
  8. Let rest for 10 minutes before slicing and serving warm.

Notes

For a healthier version, substitute ground turkey for chicken. Modify seasonings to your taste with different herbs or spices.
