A creamy and comforting pudding made with ripe bananas, peanut butter, and chia seeds, perfect for snacks or desserts.


Ingredients

  • 1/2 cup chia seeds
  • 2 cups almond milk (or any milk of choice)
  • 1/4 cup peanut butter
  • 2 ripe bananas
  • 12 tablespoons honey or maple syrup (optional)
  • Toppings: granola, nuts, fresh fruit

Instructions

  1. In a mixing bowl, combine chia seeds and almond milk. Stir well and let sit for about 10 minutes to thicken.
  2. Stir until glossy and the seeds look suspended in the milk, breaking any clumps.
  3. In another bowl, mash the ripe bananas and mix in the peanut butter and optional honey or maple syrup.
  4. Once the chia mixture is thickened, fold in the banana-peanut butter mixture gently.
  5. Divide the pudding into jars or bowls and refrigerate for at least 2 hours or overnight.
  6. Serve with your favorite toppings such as granola, nuts, or fresh fruit.

Notes

For an even fluffier texture, let the pudding rest overnight. Can be adapted with different kinds of nut butters or milk.
