Ingredients

  • 1 cup dark chocolate, chopped
  • 1/2 cup butter
  • 1 cup sugar
  • 3 eggs
  • 1 cup all-purpose flour
  • 1/3 cup cocoa powder
  • 1 teaspoon peppermint extract
  • 1 cup peppermint bark or crushed candy canes

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Melt the chocolate and butter together.
  3. Whisk sugar and eggs until frothy.
  4. Combine melted chocolate mixture with sugar and eggs.
  5. Add sifted flour, cocoa powder, and salt. Mix until just combined.
  6. Stir in peppermint extract.
  7. Grease a baking dish and pour half the batter, spreading evenly.
  8. Sprinkle half the peppermint bark over the batter, then pour the remaining batter on top.
  9. Top with remaining peppermint bark.
  10. Bake for 25-30 minutes or until a toothpick comes out slightly moist.
  11. Cool in pan for 10 minutes before transferring to a wire rack.
