Description

Delightful peppermint bark cookies with a balance of rich chocolate and refreshing peppermint, perfect for sharing during the holidays.

Ingredients

Scale
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 1/4 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup crushed peppermint candies
  • 1 cup semisweet chocolate chips
  • 1 cup white chocolate chips

Instructions

  1. Preheat the oven to 350°F (175°C). In a large bowl, cream together the butter and sugar until light and fluffy.
  2. Beat in the egg and vanilla extract until smooth.
  3. In another bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  4. Fold in the crushed peppermint candies and chocolate chips gently.
  5. Drop spoonfuls of dough onto ungreased baking sheets, spacing them a few inches apart.
  6. Bake for 10-12 minutes or until edges are lightly golden. Allow cookies to cool completely.
  7. Melt the white chocolate and drizzle over the cooled cookies, then sprinkle with additional crushed peppermint if desired. Let set before serving.

Notes

These cookies travel well in a tin layered with parchment. Store them in an airtight container for a few days to maintain freshness.
