- 2 chicken breasts
- 1 cup fresh pineapple, diced
- 1 tablespoon olive oil
- 1 teaspoon chili powder
- 1 teaspoon cumin
- Salt and pepper to taste
- 8 small corn tortillas
- Fresh cilantro for garnish
- Lime wedges for serving
Instructions
- Preheat the grill to medium-high heat.
- In a bowl, combine olive oil, chili powder, cumin, salt, and pepper. Whisk until smooth.
- Coat chicken breasts with the spice mixture and let sit for a few minutes.
- Grill the chicken for about 6-7 minutes on each side until fully cooked.
- Remove from grill and let rest for a few minutes.
- Grill the corn tortillas for about 30 seconds on each side until warm and slightly charred.
- Slice the grilled chicken and assemble the tacos with chicken and fresh pineapple on each tortilla.
- Garnish with cilantro and serve with lime wedges.
Notes
Pat the chicken dry before seasoning for a better sear. Serve tacos family-style to let everyone customize their own.
