- 2 cups desiccated coconut (divided)
- ½ cup graham cracker crumbs
- 1 packet (3 oz) pineapple-flavored gelatin powder
Instructions
- Beat the softened cream cheese in a large bowl until smooth and creamy.
- Stir in the well-drained crushed pineapple, 1 cup of coconut, graham cracker crumbs, and dry gelatin powder until combined.
- Mix until fully combined and smooth, adjusting texture with extra crumbs if too wet.
- Cover and refrigerate for 1 hour to firm up the mixture.
- Scoop out tablespoon-sized portions and roll into smooth balls.
- Roll each ball in the remaining coconut until fully coated.
- Place finished balls in an airtight container and refrigerate until serving.
