Ingredients

  • 1 can (398 mL) crushed pineapple, drained very well
  • 8 oz cream cheese, softened
  • 2 cups desiccated coconut (divided)
  • ½ cup graham cracker crumbs
  • 1 packet (3 oz) pineapple-flavored gelatin powder

Instructions

  1. Beat the softened cream cheese in a large bowl until smooth and creamy.
  2. Stir in the well-drained crushed pineapple, 1 cup of coconut, graham cracker crumbs, and dry gelatin powder until combined.
  3. Mix until fully combined and smooth, adjusting texture with extra crumbs if too wet.
  4. Cover and refrigerate for 1 hour to firm up the mixture.
  5. Scoop out tablespoon-sized portions and roll into smooth balls.
  6. Roll each ball in the remaining coconut until fully coated.
  7. Place finished balls in an airtight container and refrigerate until serving.

Notes
