Ingredients
2 cups old-fashioned rolled oats
2 cups fresh orange juice
2 cups plain Greek yogurt
2 tablespoons honey or maple syrup
Juice of 1 lemon
1/2 teaspoon ground cinnamon
2 medium Honeycrisp apples, grated
2 cups fresh blueberries (reserve half for topping)
1/2 cup walnuts, toasted and chopped
Instructions
1. Combine rolled oats and fresh orange juice in a large bowl or four jars. Stir well to moisten every oat.
2. Cover and refrigerate for 4–12 hours so the oats soften and absorb the citrus.
3. In the morning, stir in Greek yogurt, honey, lemon juice, and cinnamon until creamy.
4. Fold in grated apples and 1 cup of blueberries. Taste and adjust sweetness as needed.
5. Portion into jars or bowls. Top with remaining blueberries and toasted walnuts.
