- 1 tsp baking powder
- 1/2 tsp fine sea salt
- 1/2 tsp cream of tartar (optional)
- 1 cup (226 g) unsalted butter, softened
- 3/4 cup (150 g) granulated sugar
- 1/2 cup (110 g) brown sugar, packed
- 1 large egg
- 1 1/2 tsp vanilla extract
- Optional: 1–2 tbsp unsweetened cocoa powder for darker dough
Instructions
- Combine dry ingredients: Whisk together flour, baking powder, salt, and cream of tartar.
- Cream butter and sugars: Mix softened butter with granulated and brown sugar until light and fluffy.
- Add egg and vanilla: Mix in the egg and vanilla extract until combined.
- Combine wet and dry: Gradually add dry mixture to the butter mixture until just combined.
- Chill the dough: Shape into a disk, wrap, and chill for 30–60 minutes.
- Roll and cut shapes: Roll dough to 1/4 inch thickness, cut into shapes, and chill again briefly.
- Bake: Preheat oven to 350°F (175°C) and bake cookies for 8–12 minutes until edges are set.
- Cool and decorate: Cool cookies on a rack and decorate with icing and toppings as desired.
Notes
For best results, ensure all ingredients are at room temperature before starting. Use light-colored baking sheets to prevent over-browning.
