Description

Bring the easiest, most nostalgic holiday treat to your cookie table with these chewy and festive Rice Crispy Treats, perfect for both kids and adults.


Ingredients

  • 6 cups crisped rice cereal
  • 10 oz mini marshmallows (about one standard bag)
  • 3 tablespoons unsalted butter
  • 1/2 teaspoon pure vanilla extract
  • Pinch of fine sea salt
  • 1/4 cup green and red sprinkles or Christmas nonpareils
  • Optional: 1/2 cup white chocolate chips or holiday candies for topping
  • Optional: 1/4–1/2 teaspoon peppermint extract (if using, use less – it’s potent)

Instructions

  1. Prepare pan: line a 9×13 inch pan with parchment paper and lightly spray or butter it.
  2. Melt: in a large saucepan over low heat, melt the butter. Add marshmallows and stir until smooth.
  3. Off heat: stir in vanilla and salt. Add cereal and gently fold until fully coated.
  4. Transfer: press into the prepared pan using parchment or a buttered spatula; decorate with sprinkles.
  5. Cool: let rest for 30 minutes at room temperature (or refrigerate for 10–15 minutes).
  6. Cut: remove from pan and cut into 16 bars with a sharp knife.

Notes

For clean cuts, use a knife dipped in hot water. Store in an airtight container at room temperature for up to 3 days.
