- 6 cups crisped rice cereal
- 10 oz mini marshmallows (about one standard bag)
- 3 tablespoons unsalted butter
- 1/2 teaspoon pure vanilla extract
- Pinch of fine sea salt
- 1/4 cup green and red sprinkles or Christmas nonpareils
- Optional: 1/2 cup white chocolate chips or holiday candies for topping
- Optional: 1/4–1/2 teaspoon peppermint extract (if using, use less – it’s potent)
Instructions
- Prepare pan: line a 9×13 inch pan with parchment paper and lightly spray or butter it.
- Melt: in a large saucepan over low heat, melt the butter. Add marshmallows and stir until smooth.
- Off heat: stir in vanilla and salt. Add cereal and gently fold until fully coated.
- Transfer: press into the prepared pan using parchment or a buttered spatula; decorate with sprinkles.
- Cool: let rest for 30 minutes at room temperature (or refrigerate for 10–15 minutes).
- Cut: remove from pan and cut into 16 bars with a sharp knife.
Notes
For clean cuts, use a knife dipped in hot water. Store in an airtight container at room temperature for up to 3 days.
