- 2 large Sweet Potatoes
- 2 tablespoons Olive Oil (Extra virgin recommended)
- 1 teaspoon Salt
- 1/2 teaspoon Black Pepper
- 1 teaspoon Smoked Paprika (Omit if preferred)
- 1 cup Feta Cheese (Goat cheese can be substituted)
- 2 tablespoons Honey (Maple syrup can be used)
- 2 tablespoons Parsley (Freshly chopped)
Instructions
- Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper and arrange a cooling rack on top if desired.
- Slice the sweet potatoes into 1/2-inch rounds and pat them dry with a clean towel.
- Toss the rounds in a large bowl with olive oil, salt, pepper, and smoked paprika, coating each round evenly.
- Lay the rounds in a single layer on the baking sheet, leaving space between each piece.
- Bake in the oven for 20 minutes, then turn each round for even cooking.
- After 20 minutes, check for golden edges and tenderness; continue roasting until perfectly cooked.
- Remove the tray from the oven and sprinkle crumbled feta over the warm rounds, then drizzle with honey.
- Finish with chopped parsley and let cool slightly before serving.
Notes
For extra crispiness, use a cooling rack while roasting. Pair with a salad or main protein for a complete meal.
