Ingredients

  • 2 large Sweet Potatoes
  • 2 tablespoons Olive Oil (Extra virgin recommended)
  • 1 teaspoon Salt
  • 1/2 teaspoon Black Pepper
  • 1 teaspoon Smoked Paprika (Omit if preferred)
  • 1 cup Feta Cheese (Goat cheese can be substituted)
  • 2 tablespoons Honey (Maple syrup can be used)
  • 2 tablespoons Parsley (Freshly chopped)

Instructions

  1. Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper and arrange a cooling rack on top if desired.
  2. Slice the sweet potatoes into 1/2-inch rounds and pat them dry with a clean towel.
  3. Toss the rounds in a large bowl with olive oil, salt, pepper, and smoked paprika, coating each round evenly.
  4. Lay the rounds in a single layer on the baking sheet, leaving space between each piece.
  5. Bake in the oven for 20 minutes, then turn each round for even cooking.
  6. After 20 minutes, check for golden edges and tenderness; continue roasting until perfectly cooked.
  7. Remove the tray from the oven and sprinkle crumbled feta over the warm rounds, then drizzle with honey.
  8. Finish with chopped parsley and let cool slightly before serving.

Notes

For extra crispiness, use a cooling rack while roasting. Pair with a salad or main protein for a complete meal.
