- 1 cup granulated sugar
- 6 tablespoons unsalted butter, chopped into squares
- 1/2 cup heavy cream, warmed
- 1 teaspoon sea salt
- 8 ounces of dark or milk chocolate, chopped
- 1 tablespoon vegetable oil (optional, for sheen)
Instructions
- In a medium saucepan over medium heat, add the sugar and stir continuously until it melts into amber liquid. Do not let it burn.
- As soon as all sugar is melted, add the butter and stir constantly until melted and combined.
- Slowly pour in the warm cream (it will bubble up), stirring until smooth.
- Mix in the sea salt and remove from heat. Allow the mixture to cool for a few minutes before transferring it to a bowl. Refrigerate for about 30 minutes or until slightly firm.
- Melt the chocolate in a double boiler or microwave in bursts of 30 seconds, stirring between each burst until smooth. If using, stir in vegetable oil for added shine.
- Using a small cookie scoop, grab a portion of the salted caramel filling and roll it into a ball between your palms.
- Dip each caramel ball into the melted chocolate. Use a fork to allow excess chocolate to drip off before transferring it to a lined baking sheet. Repeat until all filling is coated.
- Sprinkle a pinch of sea salt on each truffle before the chocolate hardens.
- Refrigerate the truffles for about 30 minutes until the chocolate sets completely.
Notes
Store truffles in an airtight container lined with parchment paper for up to two weeks in the fridge or freeze for larger batches for up to three months.
