- 1 lb shrimp, peeled and deveined
- 1 cup stone-ground grits
- 1–2 cups shredded sharp cheddar cheese
- 4 oz cream cheese
- 4 cups chicken or seafood broth
- 2 tablespoons butter (for grits)
- 2 tablespoons butter (for sautéing)
- 1 diced onion
- 1 diced bell pepper
- 2–3 cloves minced garlic
- Old Bay seasoning or Cajun spices to taste
- Salt and pepper to taste
- Panko breadcrumbs and Parmesan cheese for topping (optional)
Instructions
- Bring 4 cups of chicken or seafood broth to a boil and add a pinch of salt.
- Gradually stir in 1 cup of grits, reduce heat, and cook until thickened, about 20-30 minutes for stone-ground grits.
- Stir in 1-2 cups shredded sharp cheddar cheese, 4 oz cream cheese, and 2 tablespoons butter until melted.
- Sauté 1 diced onion and 1 diced bell pepper in 2 tablespoons butter until softened; add minced garlic and cook another minute.
- Add the shrimp to the skillet, sprinkle with seasoning, and sauté until opaque, about 3-4 minutes.
- Combine the shrimp with the cheesy grits in the saucepan.
- Pour the mixture into a greased casserole dish and add toppings like breadcrumbs and cheese.
- Bake at 350°F (175°C) for 30-35 minutes until bubbly and golden brown.
- Let cool for 10 minutes before serving. Garnish with parsley or green onions if desired.
Notes
Avoid overcooking the shrimp to prevent it from becoming rubbery. You can customize the heat level by adjusting the spices.
