- 2 boneless, skinless chicken breasts
- 2 cups baby potatoes, halved
- 1 tablespoon olive oil
- 1 teaspoon garlic powder

Instructions
- Preheat the oven to 400°F (200°C).
- Toss halved baby potatoes with olive oil, garlic powder, salt, and pepper. Spread on a baking sheet and roast for 25-30 minutes until crispy.
- Season chicken breasts with salt and pepper and grill over medium heat for 6-7 minutes on each side or until cooked through.
- In the last 5 minutes of cooking, add mixed vegetables to the grill to steam.
