Classic Spaghetti Aglio e Olio

Ingredients

  • 400g spaghetti
  • 5 cloves garlic, thinly sliced
  • 100ml extra-virgin olive oil
  • 1 tsp red pepper flakes
  • Fresh parsley, chopped
  • Salt, to taste
  • Parmesan cheese, grated (optional)

Instructions

  1. Cook the spaghetti according to package instructions in salted boiling water until al dente.
  2. In a large skillet, heat the olive oil over medium heat.
  3. Add the sliced garlic and sauté until golden, making sure not to burn it.
  4. Add the red pepper flakes and sauté for an additional 30 seconds.
  5. Drain the spaghetti, reserving some cooking water, and add it to the skillet.
  6. Toss well to combine, adding reserved pasta water if needed to loosen the sauce.
  7. Remove from heat, mix in chopped parsley, and season with salt to taste.
  8. Serve hot, topped with grated Parmesan cheese if desired.
