Description

Ingredients

  • 2 medium sweet potatoes
  • 2 eggs
  • 1 avocado
  • 1/4 cup black beans
  • 1/4 cup corn
  • Salt and pepper to taste
  • Olive oil
  • Chopped cilantro for garnish

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Wash and poke holes in the sweet potatoes, then bake them for about 45-60 minutes or until tender.
  3. In the last 10 minutes of baking, heat olive oil in a pan over medium heat and cook eggs to your liking.
  4. Once the sweet potatoes are done, cut them in half and scoop out a bit of the flesh to make room for toppings.
  5. Fill each sweet potato half with black beans, corn, and the cooked eggs.
  6. Top with sliced avocado, sprinkle with salt, pepper, and cilantro.
