Description

A comforting and flavorful potato salad featuring fresh vegetables and a tangy lemon dressing, perfect for any gathering or family meal.


Ingredients

  • 2 pounds of fresh potatoes
  • 1 cup of diced cucumbers
  • 1 cup of cherry tomatoes, halved
  • 1/2 cup of chopped red onion
  • 1/2 cup of fresh parsley, chopped
  • 1/4 cup of olive oil
  • 2 tablespoons of lemon juice
  • Salt and pepper to taste
  • 1 teaspoon of sumac (optional)

Instructions

  1. Boil the potatoes in a large pot of salted water until tender, about 15-20 minutes. Drain, cool slightly, and chop into bite-sized pieces.
  2. In a large bowl, combine the potatoes, cucumbers, cherry tomatoes, red onion, and parsley. Toss gently to combine.
  3. In a small bowl, whisk together the olive oil, lemon juice, salt, pepper, and sumac if using. Stir until smooth.
  4. Pour the dressing over the salad and toss gently to coat all ingredients.
  5. Serve warm or chilled, and enjoy the comforting flavors with friends and family.

Notes
