Ingredients

  • 2 tablespoons of butter
  • 2 tablespoons of all-purpose flour
  • 2 cups of milk
  • 2 cups of shredded cheese
  • 1 teaspoon of mustard
  • Salt and pepper to taste
  • 1/2 cup of breadcrumbs (optional)

Instructions

  1. Cook the macaroni according to package instructions; drain and set aside.
  2. In a large saucepan, melt butter over medium heat.
  3. Stir in flour and cook for about 1 minute.
  4. Gradually whisk in milk, stirring until thickened.
  5. Add cheese and mustard, stirring until the cheese has melted.
  6. Combine the macaroni with the cheese sauce, seasoning with salt and pepper to taste.
  7. Pour into a baking dish and sprinkle breadcrumbs on top.
  8. Bake at 350°F (175°C) for 20-25 minutes until bubbly and golden.

Notes

Breadcrumbs can be made from stale bread pulsed with olive oil and salt for added texture. For a lighter version, use lower-fat milk or less cheese.
