- 2 cups full-fat coconut milk
- 1 cup fresh raspberries (divided)
- 2 tablespoons maple syrup
- 1 teaspoon vanilla extract
Instructions
- In a mixing bowl, combine chia seeds and coconut milk. Stir well until fully mixed and glossy.
- Add maple syrup and vanilla extract, mixing thoroughly until combined.
- Cover and refrigerate for at least 2 hours or overnight to thicken.
- Blend half of the fresh raspberries until smooth to create raspberry sauce.
- After chilling, stir the chia pudding and layer it in bowls or jars, adding raspberry sauce and whole raspberries on top.
- Serve immediately or chill again for an hour before enjoying.
