Ingredients
1 pound bone-in, skinless Halal chicken breast
4 cups cold filtered water
2 inches fresh ginger root, peeled and sliced
1 medium carrot, peeled and whole
0.5 teaspoon kosher salt
Instructions
1. Rinse your skinless Halal chicken pieces under cold water and pat dry. Peel and slice the ginger into thick coins.
2. Place the chicken, ginger coins, whole carrot, and kosher salt into the Instant Pot. Pour the cold water over the ingredients.
3. Secure the lid, turn the valve to sealing, and set to High Pressure for 25 minutes.
4. Allow a 15-minute natural pressure release, then carefully open the lid and remove the chicken and carrot.
5. Pour the liquid through a fine-mesh strainer, shred a small portion of the chicken, and serve warm.
Notes
Storage: Store the clear broth and shredded chicken in separate airtight glass containers in the refrigerator for up to 4 days.
Substitution tip: If you cannot tolerate chicken, a mild white fish like cod can be gently poached in the ginger broth instead.
