  • 1 block Feta cheese (Pecorino Romano) Use block feta for a creamier sauce.
  • 2 cups Cherry tomatoes Roasted for depth of flavor.
  • 1/4 cup Extra virgin olive oil Adds richness and heart-healthy fats.
  • 2 cloves Garlic Minced for flavor.
  • 1/4 cup Fresh basil Chopped for freshness.
  • 8 oz Pasta Whole wheat, gluten-free, or low carb.

  • to taste Pepper
  • to taste Crushed red pepper flakes Optional for additional spice.

Instructions
 

Preparation

  • Preheat the oven to 400°F (204°C).
  • Place the feta block in a baking dish and surround it with cherry tomatoes. Drizzle with olive oil; sprinkle salt, pepper, and optional red pepper flakes.
  • Roast for about 35 minutes until tomatoes burst and feta softens.

Cooking Pasta

  • Meanwhile, cook pasta until al dente while the feta roasts. Reserve ½ cup pasta water upon draining.

Sauce Preparation

  • Mash feta and tomatoes in the dish to form a creamy sauce.
  • Add minced garlic, fresh basil, and reserved pasta water slowly, stirring for desired sauce consistency.
  • Mix pasta with sauce until evenly coated. Serve warm garnished with basil and lemon zest.

Notes

Store leftovers sealed in the fridge for up to 3 days or freeze in portions for up to 3 months. Reheat gently, adding olive oil or water to retain sauce creaminess.
