Ingredients
  

For the Blackened Shrimp

  • 1 lb large raw shrimp, deveined and peeled Fresh or frozen shrimp can be used, but fresh is recommended.
  • 2 tbsp blackening spice mix Mix of cayenne, paprika, onion powder, garlic powder, dried thyme, black pepper, and salt.
  • 2 tbsp oil For searing shrimp.

For the Stroganoff Sauce

  • 1 medium onion, sliced Essential aromatic for flavor.
  • 2 cloves garlic, minced Add during onion sauté for aromatic depth.
  • 8 oz mushrooms, sliced Cremini or shiitake mushrooms add umami flavor.
  • 1 cup chicken broth For deepening the sauce flavors.
  • 1 cup sour cream or heavy cream For creaminess in the sauce.

For Serving

  • 12 oz pasta of choice Egg noodles, fettuccine, or tagliatelle work well.
  • 2 tbsp fresh parsley, chopped For garnish.

Instructions
 

Cooking the Shrimp

  • If using frozen shrimp, ensure they are thoroughly thawed and pat them dry with paper towels.
  • In a small bowl, combine cayenne pepper, paprika, onion powder, garlic powder, dried thyme, black pepper, and salt until well blended.
  • Toss the shrimp in the blackening spice mix until evenly coated.
  • Heat a cast iron skillet or non-stick pan over medium-high heat. Add a little oil and once hot, add the shrimp in a single layer.
  • Sear for 2-3 minutes on each side until opaque and cooked through. Transfer to a plate and set aside.

Making the Stroganoff Sauce

  • In the same pan, reduce heat to medium and add sliced onions. Sauté until translucent.
  • Add minced garlic and cook for an additional minute until fragrant.
  • Add sliced mushrooms and cook until browned and tender, approximately 5-7 minutes.
  • Pour in chicken broth, scraping the bottom of the pan to release flavorful bits. Bring to a simmer and let it reduce slightly for about 5-10 minutes.
  • Reduce heat to low and stir in sour cream or heavy cream until smooth and creamy. Return the blackened shrimp to the pan, stirring gently to coat.
  • Cook pasta according to package directions, drain, and add directly to the sauce, tossing gently.
  • Plate the Blackened Shrimp Stroganoff and top with freshly chopped parsley.

Notes

Don't overcrowd the pan when searing shrimp to achieve a good crust. Adjust cayenne for less heat and use fresh herbs for best results.
