  • 1.5 lbs boneless, skinless chicken breasts or thighs
  • 1 can (13.5 oz) coconut milk Use full-fat for creaminess.
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 inch piece ginger, grated
  • 1 piece bell pepper (any color), chopped
  • 2 tablespoons olive oil
  • 1 teaspoon cumin
  • 1 teaspoon coriander
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1 Juice of lime Freshly squeezed.
  • Fresh cilantro for garnish

Preparation

  • Begin by gathering all your ingredients. Dice the onion, garlic, and ginger; chop the bell peppers; and cut the chicken into bite-sized pieces.

Sauté Aromatics

  • In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the diced onions and sauté until translucent. Add the garlic and ginger, cooking until fragrant.

Cook the Chicken

  • Increase the heat and add the chicken pieces. Cook for 5-7 minutes, stirring frequently, until the chicken is browned on all sides.

Add Vegetables

  • Toss in the chopped bell peppers and sauté for an additional 3-4 minutes until slightly softened.

Incorporate Coconut Milk

  • Pour in the coconut milk, simmering over medium-low heat. Season with cumin, coriander, paprika, salt, and pepper. Let it simmer for about 20 minutes, allowing the flavors to meld and the sauce to thicken.

Finish with Lime Juice

  • Just before serving, squeeze fresh lime juice into the dish and stir in chopped cilantro for a vibrant finish.

Serve

  • Pair your dish with rice or quinoa, and enjoy the delightful combination of flavors!

Notes

Use high-quality coconut milk for a richer flavor. Avoid overcooking the chicken to keep it tender. Don't skip the lime and cilantro garnish for enhanced flavor.
