Checkerboard salad is a nostalgic, no-bake gelatin dessert made with colorful cubes of flavored gelatin, sweetened condensed milk, and a creamy white layer. Visually striking and easy to prep ahead, it's perfect for potlucks, holidays, and fun family gatherings.

Ingredients
  

  • 2 packages red gelatin (3 oz each, e.g. strawberry or cherry)
  • 2 packages green gelatin (3 oz each, e.g. lime)
  • 4 cups boiling water (2 for red, 2 for green)
  • 1 can sweetened condensed milk (14 oz)
  • 1 envelope unflavored gelatin
  • 1 cup boiling water
  • 1 cup cold water
  • whipped topping (optional, for garnish)

Instructions
 

  • Prepare red and green gelatin separately by dissolving each flavor in 2 cups of boiling water. Pour into separate 8x8 pans and refrigerate until firm (about 4 hours).
  • Once set, cut both gelatin blocks into 1-inch cubes.
  • Arrange alternating red and green cubes in a checkerboard pattern inside a clear 9x13 glass dish.
  • In a bowl, dissolve 1 envelope unflavored gelatin in 1 cup boiling water. Add condensed milk and 1 cup cold water. Stir and let cool to room temperature.
  • Slowly pour the cooled creamy mixture over the arranged cubes, using a spatula to guide if needed to avoid disturbing the pattern.
  • Refrigerate for at least 4 hours or overnight until fully set.
  • Optional: Top with whipped topping just before serving. Slice into squares to serve.

Notes

For clean slices, dip your knife in hot water before cutting. Let the creamy layer cool before pouring to avoid melted cubes. Chill overnight for best texture. Try different gelatin flavors to match holidays or themes.
