  • 4 medium medium-sized potatoes (Russet or Yukon Gold), diced Ideal starchy potatoes for absorption of flavors.
  • 1 pound smoked sausage, sliced Choose a high-quality option, turkey or chicken as a lower-fat alternative.
  • 2 cups shredded cheese (sharp cheddar, mozzarella, or a blend) A blend can enhance flavor.
  • 1 cup ranch dressing Consider using Greek yogurt for a healthier version.
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • to taste Salt and pepper Season generously.
  • to taste Fresh chives or parsley for garnish (optional) Adds color and freshness.

Instructions
 

Preparation

  • Preheat your oven to 400°F (200°C).
  • Wash, peel (if desired), and dice the potatoes into bite-sized cubes.
  • In a large skillet over medium heat, drizzle olive oil, add the sliced smoked sausage and sauté for about 5-7 minutes until browned.
  • In a large mixing bowl, combine the diced potatoes, sautéed sausage, ranch dressing, garlic powder, onion powder, salt, and pepper. Stir until everything is evenly coated.
  • Pour the mixture into a greased 9x13 inch baking dish, spreading it out evenly.
  • Sprinkle the shredded cheese generously on top.

Baking

  • Cover the dish with aluminum foil and bake for 30 minutes.
  • Remove the foil and bake for another 15-20 minutes or until the potatoes are fork-tender and the cheese is bubbly and golden.
  • Let it cool for a few minutes, then garnish with fresh chives or parsley before serving.

Notes

Prepping the potato and sausage mixture the day prior can save time. For a low-carb option, substitute potatoes with cauliflower.
