Ingredients
  

For the Homemade Cherry Syrup

  • 2 cups fresh or frozen pitted cherries Use high-quality cherries for best flavor.
  • 1 cup sugar Adjust to taste.
  • 1/2 cup water To help dissolve the sugar.

For the Soda

  • 4 cups club soda or seltzer Provides a crisp, clean fizz.
  • 1 cup heavy cream Or half-and-half for a lighter option.
  • 1/2 cup whipped cream For garnish.
  • 4 pieces maraschino cherries For garnish.

Instructions
 

Making the Cherry Syrup

  • In a saucepan, combine the cherries, sugar, and water.
  • Simmer on medium heat until the cherries break down and the mixture thickens into syrup.
  • Remove from heat and let cool.

Assembling the Cherry Cream Soda

  • Pour about 1/4 cup of the homemade cherry syrup into the bottom of each tall glass.
  • Fill each glass with ice to separate the layers.
  • Slowly pour the club soda or seltzer over the ice.
  • Gently pour the heavy cream over the back of a spoon to float on top.
  • Top each drink with whipped cream and maraschino cherries.
  • Serve with a long spoon or straw and instruct guests to stir before sipping.

Notes

Experiment with variations by adding a scoop of vanilla ice cream for a float or a splash of vanilla vodka for an adult twist.
