  • 1 pound Chicken Breast, skinless and boneless Slice into thin strips
  • 8 ounces Lo Mein Noodles Fresh or dried according to package instructions
  • 1 cup Mixed Vegetables Bell peppers, carrots, snap peas, and scallions
  • 2 tablespoons Soy Sauce Use low-sodium if desired
  • 1 tablespoon Oyster Sauce Adds umami flavor
  • 1 teaspoon Sesame Oil For a nutty aroma
  • 2 cloves Garlic, minced Essential for flavor
  • 1 teaspoon Ginger, minced Adds spice and warmth
  • 1 tablespoon Vegetable Oil For sautéing

Instructions
 

Marinating the Chicken

  • Slice the chicken breast into thin strips.
  • In a bowl, combine soy sauce, oyster sauce, and sesame oil. Add minced garlic and ginger.
  • Toss the chicken in the marinade and let it sit for at least 15 minutes.

Preparing the Noodles

  • Cook the lo mein noodles according to the package instructions until slightly undercooked.
  • Drain and rinse under cold water to stop cooking, then set aside.

Sautéing the Chicken

  • Heat vegetable oil in a large skillet or wok over high heat.
  • Add the marinated chicken and sauté for 5-7 minutes until fully cooked and golden brown.
  • Remove the chicken from the skillet and set it aside.

Stir-Frying the Vegetables

  • In the same skillet, add more oil if needed. Add sliced carrots, bell peppers, and snap peas.
  • Stir-fry for 3-4 minutes until vegetables are tender but crisp.
  • Add the cooked chicken and previously cooked lo mein noodles back into the pan.

Adding Flavors and Finishing Touches

  • Pour the remaining soy and oyster sauce mixture over the ingredients in the pan.
  • Toss everything together and stir-fry for another 2-3 minutes.
  • Finish with a drizzle of sesame oil and garnish with chopped scallions before serving.

Notes

Don't overcrowd the pan to ensure proper cooking. Use high heat for quick stir-frying, and prep all ingredients before starting.
