Instructions
 

  • Grate the zucchini or potato, sprinkle with salt, and let sit for 10 minutes. Squeeze out as much moisture as possible.
  • In a large bowl, combine cottage cheese, eggs, grated vegetables, breadcrumbs (or almond flour), onion, and seasonings. Mix until cohesive.
  • Let the batter rest for 5 minutes to allow the binder to absorb moisture.
  • Form 2-inch patties with damp hands and flatten slightly for even cooking.
  • For pan-fried fritters: heat olive oil in a nonstick pan over medium heat. Fry fritters 3 minutes per side until golden brown.
  • For air fryer: spray tray with oil, cook at 375°F (190°C) for 15 minutes, turning halfway. For baked: 375°F for 22 minutes, turning at midpoint.
  • Drain fritters briefly on paper towels or a rack. Serve hot or cold with dips or salad.
