Equipment

Ingredients
  

  • 225 g halloumi cheese block, patted very dry and cut into ½-inch sticks
  • 2 tbsp all-purpose flour
  • 2 tbsp cornstarch
  • ½ tsp smoked paprika
  • ¼ tsp garlic powder
  • pinch white pepper
  • 1 large egg, lightly beaten
  • 1 cup panko breadcrumbs
  • 1 cup neutral oil (canola or avocado) for frying
  • 3 tbsp honey
  • ½ tsp red pepper flakes (adjust to taste)
  • 1 tsp apple cider vinegar
  • 1 tbsp fresh parsley or mint, chopped (for garnish)
  • ¼ cup Greek yogurt (for dipping, optional)

Instructions
 

  • Pat the halloumi dry with paper towels, then slice into fry-shaped sticks about ½ inch thick.
  • In one bowl, whisk together flour, cornstarch, smoked paprika, garlic powder, and white pepper. In a second bowl, beat the egg. In a third bowl, add the panko breadcrumbs.
  • Dredge each halloumi stick in the flour mixture, dip into the beaten egg, and then press into the panko breadcrumbs until fully coated. Place on a tray and repeat with remaining pieces.
  • For pan frying: Heat about 1 inch of oil in a skillet to 350°F (180°C). Fry halloumi in batches for 2–3 minutes per side until golden and crispy. Drain on a wire rack.
  • For air frying: Preheat to 400°F (200°C). Spray the basket with oil, arrange fries in a single layer, spray tops with oil, and air fry 6–8 minutes, flipping halfway through, until golden.
  • In a small bowl, whisk together honey, red pepper flakes, and apple cider vinegar to make the hot honey glaze.
  • Toss the freshly cooked fries in the hot honey glaze until evenly coated. Garnish with chopped herbs and serve immediately with a side of Greek yogurt.

Notes

For the crispiest fries, always pat the halloumi completely dry before coating. Use Panko breadcrumbs, avoid overcrowding during frying, and serve immediately for the best crunch. The spicy hot honey glaze can be made ahead of time and stored in the fridge for up to one week.
