Main Ingredients

  • 2 cups cooked chicken, shredded Use leftover rotisserie chicken to save time.
  • 4 cups chicken broth Use homemade chicken broth for a richer taste, if available.
  • 2 cups egg noodles Whole wheat or gluten-free egg noodles can be used.
  • 1 cup carrots, sliced
  • 1 cup celery, sliced
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • to taste Salt and pepper
  • 2 tablespoons olive oil
  • 2 tablespoons fresh parsley, chopped Optional for garnish.

Instructions
 

Preparation

  • In a large pot, heat olive oil over medium heat.
  • Add onions, carrots, and celery; sauté until soft.
  • Add garlic and thyme, cooking for another minute.
  • Pour in the chicken broth and bring to a boil.
  • Add the egg noodles and cook according to package instructions.
  • Stir in the shredded chicken and simmer for an additional 5 minutes.
  • Season with salt and pepper to taste.

Serving

  • Serve hot, garnished with fresh parsley if desired.

Notes

If you have leftovers, let the soup cool before storing it. Place it in an airtight container and keep in the fridge for up to three days, or freeze for longer storage. Leave space in the container as it may expand when frozen.
