Equipment

  • mixing bowls
  • 8x8 baking dish
  • Fork or pastry cutter
  • measuring cups
  • Oven

Ingredients

  • 5 ripe peaches, sliced (about 4 cups)
  • 1/3 cup brown sugar
  • 1 tbsp lemon juice
  • 1 tsp cinnamon
  • 1 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/4 cup cold butter, cubed
  • 1/2 cup milk

Instructions

  • Preheat oven to 375°F (190°C). In a bowl, toss peach slices with brown sugar, lemon juice, and cinnamon.
  • Pour the peach mixture into a greased 8x8 baking dish.
  • In a separate bowl, whisk together flour, sugar, baking powder, and salt. Cut in cold butter until crumbly.
  • Stir in milk until just combined to make a thick batter.
  • Drop spoonfuls of batter over the peaches to mostly cover the surface.
  • Bake for 35 minutes or until the topping is golden brown and filling is bubbly. Cool slightly before serving.

Notes

For extra flavor, try adding a dash of cinnamon or nutmeg to the peach filling. You can substitute brown sugar with coconut sugar or maple syrup. Best served warm. Pairs well with sweet tea or a scoop of vanilla ice cream.
