  • 2 large beaten eggs

  • 3/4 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon dried oregano

For the Hot Honey Sauce

  • 1/3 cup honey Preferably mild, like clover.
  • 1.5 tablespoons hot sauce Frank's RedHot or Cholula recommended.
  • 3/4 teaspoon red chili flakes
  • 1 pinch salt
  • 1 tablespoon apple cider vinegar Optional for tang.

For Serving

  • 7 ounces crumbled feta cheese About 1.5 cups, preferably full-fat.

Instructions
 

Making the Hot Honey Sauce

  • In a small saucepan, combine honey, hot sauce, chili flakes, and salt over low heat.
  • Stir continuously for 2-3 minutes until the honey becomes slightly more liquid and aromatic.
  • Remove from heat and let the mixture steep while preparing the chicken.

Preparing the Chicken

  • Slice each chicken breast horizontally to create thinner cutlets.
  • Mix all the seasoning ingredients in a small bowl and rub generously over both sides of each cutlet. Let rest for 10 minutes.
  • Set up a breading station with flour, beaten eggs, and panko breadcrumbs in separate shallow dishes.
  • Dredge each cutlet in flour, dip in egg, then coat with panko, pressing firmly.

Cooking Methods

  • For pan-frying, heat 2 tablespoons of oil in a large skillet over medium-high heat until shimmering.
  • Cook cutlets for 4-5 minutes on each side until golden brown and cooked through to 165°F.
  • For oven baking, preheat to 425°F, bake for 20-25 minutes flipping halfway through.
  • For air fryer method, preheat to 400°F, spray cutlets with oil, and cook for 10 minutes total, flipping halfway.

Serving

  • Drizzle the hot honey sauce over the cooked chicken just before serving.
  • Generously sprinkle with crumbled feta and garnish with parsley.

Notes

For meal prep, store components separately to maintain crispiness. Add hot honey and feta just before serving for best results.
