  • 1 cup sago pearls Rinse under cold water before cooking.
  • 2 cups coconut milk Use full-fat for creaminess.
  • 1/4 cup sugar Adjust according to the sweetness of mango.
  • 1/2 cup water For cooking sago.
  • a pinch salt To enhance flavors.
  • optional mint leaves For garnish.

Preparation

  • Rinse the sago pearls under cold water.
  • Boil a pot of about 4 cups of water.
  • Add the sago pearls to the boiling water and cook for about 10-15 minutes until translucent.
  • Drain and rinse the cooked sago under cold water.
  • Peel and slice the mangoes, reserving some slices for garnish.
  • Blend the mango pieces until smooth, adjusting with a little water if too thick.

Mixing Ingredients

  • In a saucepan, combine coconut milk, sugar, and a pinch of salt; heat until sugar dissolves.
  • Stir in the mango puree once sugar is dissolved.
  • Fold in the cooked sago pearls gently.

Chilling and Serving

  • Pour the mixture into serving bowls and refrigerate for at least 2 hours.
  • Garnish with reserved mango slices and mint leaves before serving.

Notes

For varied flavors, consider adding other tropical fruits or adjusting sweetness based on mangoes used.
