Ingredients
  

Main Ingredients

  • 3 medium medium-sized apples, cored and chopped Varieties like Honeycrisp, Fuji, or Gala are recommended.
  • 4 medium medium carrots, peeled and sliced Fresh, whole carrots provide better texture and flavor.

Glaze Ingredients

  • 1/4 cup pure maple syrup Use Grade A for a lighter flavor or Grade B for a robust taste.
  • 2 tablespoons Dijon mustard Adds sharpness and flavor.
  • 2 tablespoons olive oil
  • to taste Salt and pepper

Garnish

  • optional Fresh herbs (Thyme or rosemary) For garnishing before serving.

Instructions
 

Preparation

  • Gather all your ingredients.
  • Preheat your oven to 400°F (200°C).
  • In a mixing bowl, whisk together the maple syrup, Dijon mustard, olive oil, salt, and pepper.
  • In a large bowl, combine the chopped apples and sliced carrots. Pour the glaze over the mixture and toss until all pieces are well-coated.
  • Spread the coated apples and carrots in a single layer on a baking sheet lined with parchment paper.

Cooking

  • Place the baking sheet in the preheated oven and roast for 25-30 minutes, stirring halfway through.
  • Once roasted, remove from the oven and let cool slightly. Garnish with fresh herbs before serving.

Notes

Don’t overcrowd the baking sheet to avoid steaming. Adjust cooking times based on your oven. Taste before serving to adjust seasoning.
