  • Begin by chopping your vegetables and chicken into bite-sized pieces.

Cooking

  • In a large skillet, heat a tablespoon of oil over medium-high heat.
  • Season the chicken generously with salt and pepper, and add it to the skillet. Sear the chicken for about 6–7 minutes or until golden brown on all sides.
  • Add the diced onions and chopped bell peppers, stirring them into the pan with the chicken. Sauté for another 3–4 minutes until softened.
  • Add the uncooked rice to the mixture, stirring to coat it in the chicken juices. Then pour the chicken broth into the pan.
  • Drizzle the honey BBQ sauce over the chicken and rice, using a spoon to mix it gently into the dish. Bring to a simmer.
  • Cover the skillet with a lid, lowering the heat to medium-low. Allow it to cook for about 20-25 minutes or until the rice is tender and has absorbed the broth.
  • After the cooking time, remove the lid and fluff the rice with a fork. Adjust seasoning with salt and pepper if needed.
  • Plate the dish warm, garnishing with fresh herbs such as cilantro or parsley if desired.
