Preparation

  • Gather all your ingredients.
  • Preheat your oven to 350°F (175°C).
  • In a skillet over medium heat, crumble and cook the sausage until browned. Drain excess grease and set aside.
  • In a large bowl, mix the pancake mix, milk, eggs, sugar, and vanilla extract until combined; be careful not to overmix.

Assembly and Baking

  • In a greased 9x13-inch baking dish, pour half of the pancake batter into the bottom.
  • Spread the cooked sausage evenly over the batter, then pour the remaining pancake batter on top.
  • Bake in the preheated oven for about 30-35 minutes, or until pancakes are puffed and golden brown.
  • Cool for a few minutes before slicing. Serve warm with maple syrup and toppings.

Notes

You can prepare the casserole the night before and bake it in the morning. Feel free to customize with different sausages, add vegetables, or mix in fruits or chocolate chips.
