  • 2 cups pecans, roughly chopped Pecans provide a satisfying crunch and nutty flavor.
  • 1 cup granulated sugar For sweetness.
  • 1/2 cup unsalted butter Essential for richness.
  • 1 cup brown sugar, packed Adds depth and chewy texture.
  • 1/2 cup corn syrup Helps stabilize the mixture.
  • 1 teaspoon vanilla extract Adds depth of flavor.
  • 1/2 teaspoon sea salt Enhances overall flavor.
  • 1 1/2 cups semi-sweet or dark chocolate chips For the chocolate layer.

Preparation

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • Spread the chopped pecans evenly on the prepared baking sheet and toast them for about 8-10 minutes or until fragrant and golden brown.
  • In a medium saucepan over medium heat, combine granulated sugar, brown sugar, corn syrup, and butter. Stir until melted and bubbling.
  • Reduce heat and add vanilla extract and sea salt, stirring continuously until thickened (about 2-3 minutes). Fold in the toasted pecans.
  • Transfer the pecan mixture to the lined baking sheet and spread evenly.
  • Melt chocolate chips in a microwave-safe bowl in 30-second intervals, stirring until smooth. Pour over the pecan mixture and spread evenly with a spatula.
  • Allow to cool completely at room temperature or refrigerate for quicker cooling.
  • Once hardened, lift the parchment to remove and break or cut into pieces.

Notes

Store in an airtight container. Will last up to two weeks at room temperature or longer in the fridge. Avoid overheating chocolate.
