  • 2 cups all-purpose flour
  • 1.5 cups granulated sugar
  • 1 cup pumpkin puree (not pumpkin pie filling)
  • 1 cup vegetable oil
  • 4 large eggs
  • 2 tsp baking powder
  • 2 tsp ground cinnamon
  • 0.5 tsp nutmeg
  • 0.5 tsp ginger
  • 0.5 tsp salt
  • 1 tsp vanilla extract

Optional Toppings

Instructions
 

Preparation

  • Preheat oven to 350°F (175°C). Grease a 9x13-inch baking dish.
  • In a large bowl, whisk together pumpkin puree, oil, sugar, eggs, and vanilla until smooth.
  • In a separate bowl, sift together flour, baking powder, cinnamon, nutmeg, ginger, and salt.
  • Gradually fold the dry ingredients into the wet mixture until well incorporated.

Baking

  • Pour the batter into the prepared dish and bake for 25–30 minutes, or until a toothpick comes out clean.
  • Cool completely before frosting or slicing into bars.

Notes

Store leftovers in an airtight container in the fridge for up to 5 days. Freeze bars (without frosting) for up to 2 months.
