Ingredients
  

  • 1 cup unsalted butter, room temperature
  • 1 cup granulated sugar (plus extra for rolling)
  • 1 large egg
  • 1 tsp vanilla extract
  • 2 ¾ cups all-purpose flour
  • ½ tsp baking soda
  • ½ tsp baking powder
  • 1 pinch fine salt
  • 4 packets (85 g each) flavored Jello powder (strawberry, lime, grape, orange)

Instructions
 

  • Preheat oven to 350°F (175°C). Line baking sheets with parchment or silicone mats.

  • Beat butter and sugar on medium-high speed for 2–3 minutes until fluffy.
  • Mix in egg and vanilla until creamy and well combined.
  • In a separate bowl, whisk together flour, baking soda, baking powder, and salt.
  • Gradually add dry ingredients to the wet mixture and mix just until combined.
  • Divide dough into four bowls. Add a packet of Jello to each bowl and knead until evenly colored.
  • Scoop 1-inch dough balls and roll in granulated or colored sugar.
  • Arrange balls 2 inches apart on baking sheets, flatten slightly, and bake for 8–10 minutes until edges are just set.
  • Cool on tray for 5 minutes, then transfer to a rack to finish cooling.

Notes

For best results, chill the dough before baking for plumper cookies and less spread. Use different Jello flavors for a full rainbow effect. Customize colors for seasonal themes—red and green for Christmas, or pastels for spring. Store in an airtight container up to 5 days or freeze dough balls for a month.
