Preparation

  • Wash and chop all vegetables. Cut beef into 1-inch cubes and season with salt and pepper.
  • In a large pot, heat oil over medium-high heat.

Cooking

  • Sear beef in batches for 3-4 minutes until browned on all sides. Remove beef and set aside.
  • Sauté onion, celery, and carrots for about 5 minutes. Add garlic and cook for another minute.
  • Deglaze pot with wine, scraping browned bits, and allow to reduce for 3-4 minutes.
  • Add the beef back to the pot along with potatoes and beef broth. Toss in thyme and bay leaves.
  • Bring to a simmer. Reduce heat to low, cover, and let simmer for 2-3 hours.
  • Taste and adjust seasonings as needed before serving.
  • Remove bay leaves and serve hot, garnished with fresh parsley.

Notes

For extra flavor, consider adding a tablespoon of Worcestershire sauce. Don't skip the browning step as it's key to enhancing the overall taste.
